Mediterranean delight

Our vacation this year went to beautiful Cyprus in the Mediterranean sea. I just absolutely love food from this part of the world, reminded me of our honeymoon to Kefalonia, Greece. A salad doesn´t sound like anything special, well this salad will tickle your taste buds as it has that little extra that you just can´t put your finger on. A fresh salad that I served with a red(could also do white) Cyprus wine that we brought with us home. Besides the wine this is a figure friendly salad or as I like to say South Beach Diet friendly!



Mediterranean Chicken salad w/ couscous and feta:
(Recipe makes for 4)

5dl water
1 chicken buljong
4dl cous cous
little drizzles olive oil
2-4 good handfuls mixed salad(rinsed)
100g feta cheese
1 avocado
1 small red onion
1 "flowerpot" of cilantro(koriander)
2-4 chicken breasts
salt
provenscale spices

dressing
3 tablespoons Olive oil
1 tablespoon white wine or apple vinegar
1 tablespoon lemon

Boil up the water with the chicken buljong and olive oil, as the water starts to boil take it off the heat and throw in the couscous, put a lid on and let sit for 5min and then stir in chopped cilantro(koriander). As the cous cous sits, butterfly and season your chicken with salt and provenscale spices and grill/bake/fry your chicken(grilling or baking is a healthier alternative). On an indoor grill it only takes about 5min, but allow 30-35min for baking. You can chop up onion, avocado and feta cheese while the chicken cooks. Blend veggies and cheese in with the rinsed salad leaves. Blend the dressing in a separate bowl and then poor over salad mix. Blend in the couscous mixture and serve on a plate with chicken ontop.
