The difference of a pancake

What is so special about a pancake? 


A pancake is a thin, flat, round cake prepared from a batter, and cooked on a hot griddle or frying pan.  Most pancakes are quick breads; some use a yeast-raised or fermented batter. Most pancakes are cooked one side on a griddle and flipped partway through to cook the other side. Depending on the region, pancakes may be served at any time, with a variety of toppings or fillings including jam, chocolate chips, fruit, syrup or meat.


This is the definition of what a pancake is in the dictionary. Well I beg to differ! A pancake can be so much more. A dessert pancake as described above is most delicious yes, but a white flour based pancake doesn´t have the most nutritious value especially if you are feeding your child for a healthy breakfeast. 


My daughter especially loves my buckweat pancakes, Buckwheat is actually a seed. It is gluten free and makes a wonderful food for those who are gluten intolerant or who have an allergy to the wheat protein. This pancake is a really satisfying one for both kids and adults as it has high fiber and contains Iron, Niacin, Folate and even Vitamin K. Serve it with some cut up fruit, or for the younger ones that haven´t started with big bites with some homemade jam. 




200g  buckwheat flakes
4dl natural yogurt(turkish yogurt is the best)
3 tablespoons melted butter
2 egg yokes(egg whites optional)
1/2 teaspoon salt(optional or can use 1/4)
1 teaspoon baking powder
a dash with whole milk if batter is a little thick


mix the dry and mix the wet ingrediences in each bowl, then mix together. Warm a pan with a little bit Canola Oil(rapsolje) and fry on medium heat small pancakes until they start to bubble on top, then flip. Do not flip more then once otherwise the pancake will get dry.


So only sweet pancakes you say? NO! 


A new variety pancake for the kid who wants to do everything her self. 
Cheese and veggie pancake for dinner, yum! My daughter didn´t eat much of these as she was so tired, however even I as an adult enjoyed these so they are a winner for everyone I think.



2 carrots
1/4  zucchini 
1/4 cheese of your liking 
2 small potatoes 
2 large eggs 
*1/4 cup bread crumbs(this is optional for those that cannot eat gluten or staying away from bread)
1/4 tsp salt 
dash of cayenne pepper
vegetable oil

Peel carrots and potatoes and grate them, along with zucchini and cheddar cheese into large bowl. 
Stir in eggs, *bread crumbs, salt and pepper.
Heat vegetable oil in a pan. Take a tablespoon and get a ball of the batter and press together into a firm ball. Put on the frying pan and press down with spatula and flatten. Cook until well browned on both sides. 
As each pancake is done remove from pan and set on a plate covered with paper towel to drain. 
Serve hot. 

This is an excellent pancake to freez and take up one or two for kids dinner when you have a busy day!!!
